1 1/4 pound cucumbers
1/4 Spanish onion – finely chopped
2 scallions – sliced into 1/2″ lengths
1/4 cup cilantro – chopped
2 tablespoons lime juice (or lemon juice, if limes are not in season)
1 teaspoon soft brown sugar
1 tablespoon sesame oil
1 tablespoon safflower oil
Salt and pepper
2 tablespoons sesame seeds – lightly toasted
- Cut cucumbers lengthwise, remove seeds with a spoon then slice into 1/4 inch crescents.
- Mix in onion, scallions and cilantro.
- Make a dressing by dissolving brown sugar in lime or lemon juice and adding sesame oil, safflower oil, salt and pepper to taste.
- Garnish the salad with freshly toasted sesame seeds just before serving.
