Thai Cucumber Salad


1 1/4 pound cucumbers
1/4 Spanish onion – finely chopped
2 scallions – sliced into 1/2″ lengths
1/4 cup cilantro – chopped
2 tablespoons lime juice (or lemon juice, if limes are not in season)
1 teaspoon soft brown sugar
1 tablespoon sesame oil
1 tablespoon safflower oil
Salt and pepper
2 tablespoons sesame seeds – lightly toasted


  1. Cut cucumbers lengthwise, remove seeds with a spoon then slice into 1/4 inch crescents.
  2. Mix in onion, scallions and cilantro.
  3. Make a dressing by dissolving brown sugar in lime or lemon juice and adding sesame oil, safflower oil, salt and pepper to taste.
  4. Garnish the salad with freshly toasted sesame seeds just before serving.
