1 cup raw quinoa
2 1/2 cups water
2 tablespoons lime juice
2 tablespoons red wine vinegar
1 tablespoon toasted sesame oil
1/2 cup red onions – diced small
1/2 cup red pepper – diced small
1/4 bunch parsley – chopped
1/3 bunch scallions – sliced
1/2 teaspoon salt
1/8 teaspoon pepper
- Boil water in saucepan. Add quinoa, cover and turn off heat. Let stand for 10 minutes until all water is absorbed and quinoa is fluffy.
- Mix together lime juice, vinegar and sesame oil and toss cooked quinoa with this dressing. Mix with all other ingredients in a large bowl.
- Serve warm or refrigerate until serving.
