Quinoa Salad


Serves 6

1 cup raw quinoa
2 1/2 cups water
2 tablespoons lime juice
2 tablespoons red wine vinegar
1 tablespoon toasted sesame oil
1/2 cup red onions – diced small
1/2 cup red pepper – diced small
1/4 bunch parsley – chopped
1/3 bunch scallions – sliced
1/2 teaspoon salt
1/8 teaspoon pepper


  1. Boil water in saucepan. Add quinoa, cover and turn off heat. Let stand for 10 minutes until all water is absorbed and quinoa is fluffy.
  2. Mix together lime juice, vinegar and sesame oil and toss cooked quinoa with this dressing. Mix with all other ingredients in a large bowl.
  3. Serve warm or refrigerate until serving.
