Wild Rice Pilaf

Ingredients

Serves 6

1 Tablespoon olive oil
1 each onion, diced small
8 wt ounces carrot, diced small
8 wt ounces celery, diced small
2 cloves garlic, minced
½ cup wild rice, uncooked
3 ½ cups veggie broth
1 cup basmati rice, extra long grain
2 Tablespoons parsley, fresh, chopped

Directions

  1. Heat oil in a pan/pot and add onion, carrots, celery and garlic. Cook until tender.
  2. Add Wild Rice and broth and heat to a boil. Cover and cook over low heat for 25 minutes.
  3. Add white rice and cover and cook for another 20 minutes or until done.
  4. Stir in parsley.

Using a rice cooker: Sauté veggies until tender. Add wild rice and the appropriate amount of veggie stock to the rice cooker. Add the veggies, salt and pepper to taste. Cook the white rice separately on the stove until done. Add the white rice to the rice cooker while there is still some liquid in the wild rice, a little before it is done. Stir in parsley before serving.
