Stir-Fried Bok Choy and Shiitake Mushrooms
Ingredients
Serves 4
3 tablespoons sunflower oil
1 tablespoon toasted sesame oil
2-3 tablespoons fresh ginger, finely chopped
2-3 tablespoons fresh garlic, finely chopped
1 tablespoon salt
½ pound shiitake mushrooms, thinly sliced, stems removed
1 ½ pounds baby bok choy, slice crosswise in 1-inch pieces
1 tablespoon tamari
Directions
- Season the wok. In a wok over medium-high heat, add the sunflower and toasted sesame oils, along with the fresh ginger. Let the ginger sizzle for 30 seconds.
- Cook the shiitake mushrooms. Add the shiitake mushrooms and cook for 3-4 minutes until they begin to brown. With a metal spatula, frequently stir the mushrooms in the wok. When the mushrooms are almost cooked, add the fresh garlic and stir.
- Cook the bok choy. When the mushrooms are well browned, add the bok choy and stir frequently with a metal spatula. Cook for 3-4 minutes, until the bok choy is cooked but still crisp. Add the tamari to taste. More toasted sesame oil can be added at this stage, per your taste preference.
- Serve. Transfer to serving bowl and eat quickly after serving for best taste.
